BAINGAN BHARTA WITH COCONUT MILK


Cooking Time : 10/15 minutes to roast Baingan
Processing Time : 5 minutes
 
Ingredients:
½ Kg big size Baingan
1/4 cup tamarind juice or 1 teaspoon readymade tamrind paste
Small piece of Jaggery (about size of lemon)
1cup thick coconut milk or 1 pack of readymade coconut milk
4-5 green chilies cut into pieces.
1 tsp roasted cumin seeds powder (Jeera Powder)
1 tsp ginger powder
 Pinch of asafetida (Hing)
 Salt to taste
Chopped Dhania

Procedure:
Roast Baingan on gas or in microwave till you get nice aroma, let it cool a bit and then remove skin and mash it.
Mix Jaggery in coconut milk till it gets fully dissolved in it. Add salt, tamarind juice, Chili pieces cumin seed & ginger powder, and roasted Baingan pulp to coconut milk and mix thoroughly. Add Dhania and let it rest for an hour or two so all flavours get absorbed in Baingan and it will taste better.
If you like you can tamper it with ghee and Jeera.
