INGREDIENTS:

Cups Sweet Corn

Tablespoon Butter
2
Tablespoon Corn flour/Corn Starch
1
Small Onion – finely chopped
3/4
pods Garlic - finely chopped
4/5
Cups Water
Salt
– per taste
Pepper
Powder – per taste
PROCEDURE:
Clean
Sweet Corn and wash it with water, drain.
Transfer
it to microwavable bowl, add 1 cup water, cover it and cook in microwave for 5
minutes.
Alternately
Sweet corn can be pressure cooked.
In a
pan put 2 Tablespoons butter, add finely chopped onion and garlic in it and
cook it on medium flame stirring occasionally till onion start looking translucent.
Now take
the cooked sweet corn and divide it in two portions of 3/4 th &
1/4th.
Put
major portion in to a mixer bowl & grind it finely. Add the ground corn to
the pan of butter fried
onion
and garlic. Add 3 cups of water, Salt, Pepper Powder and mix it thoroughly. Put the pan on flame for boiling it. Mix 2
Tablespoon Corn flour/Corn Starch to ½ a cup of water to make paste, add it
along with balance 1/4th sweet corn to boiling pan. Check
consistency and add water if needed.
Boil
it for 4/5 minutes. Serve hot.
TIP:
Finely
chopped cabbage, carrot & French beans can be added while frying onion
& garlic to make it Vegetable Sweet Corn soup.
Add
boiled & finely shredded Chicken pieces to make it Chicken Sweet Corn soup.
